I'd like to be able to create a search of emails with a result that combines, for example, the sender and text within an attachment, e.g.:

All messages sent by Jo Bloggs that include attachments that are word documents containing the phrase "apples and oranges"

The Spotlight importer for Apple Mail encodes the sender of the message in the "Where From" property of the attachment.
You can thus search for Word files where "Where From" contains "Jo Bloggs" and "Text Content" contains the phrase "apples and oranges"
You can use the Inspector panel in HoudahSpot to see what attributes are available for a given file. Select a file you received as an attachment and you will see it has several values for "Where From". On El Capitan, I get sender name, subject and message id.
